This recipe makes 4 large muffin-shaped bakes which you could consume over two days. Serve with slaw, salad or cooked greens for a wholesome lunch option

INGREDIENTS

  • 2 large or 4 small garlic cloves, finely grated
  • 1 red chilli, deseeded and finely chopped
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 2 medium courgettes, coarsely grated
  • 6 large eggs
  • 40g feta
  • handful fresh coriander, chopped
  • rapeseed oil, for greasing
  • 1 tsp ground coriander
  • 125g frozen peas

INSTRUCTIONS
