Quinoa salad with spinach, strawberries, blueberries, peaches, and mandarin oranges – a vibrant Summer salad that features lots of berries and fruit! The salad is tossed in a Balsamic vinaigrette dressing made from scratch using olive oil, balsamic vinegar, brown sugar, mustard powder, onion and garlic powders. This quinoa salad is healthy, vegetarian, gluten free, dairy free, vegan, nut free recipe, packed with fiber and nutrients.
INGREDIENTS
Dressing:
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 3 tablespoons brown sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon mustard powder
- 1/2 teaspoon onion powder
- garlic salt or garlic powder
- salt and pepper
Salad:
- 6 oz spinach fresh (about 5 cups of torn leaves)
- 2 cups strawberries , sliced, cleaned and hulled
- 1 cup blueberries
- 1 cup mandarin orange slices
- 1 peach , chopped
- 1/4 cup green onions , sliced
- 1 1/2 cups quinoa , cooked
INSTRUCTIONS
- In a medium bowl, combine the dressing ingredients, and whisk together well. Add salt and pepper to taste. You can serve the dressing immediately or you can cover it and chill for an hour.
- In a large bowl, combine all of the salad ingredients. Right before serving, add the dressing to the salad and toss.
