Ingredients
  • 300 g white chocolate chopped finely
  • 1/3 cup 80ml thickened cream
  • 30 g freeze dried strawberries crushed
  • 200 g white chocolate extra, for coating
Instructions
  1. Heat the cream over low heat, stirring, until bubbles start to appear.
  2. Pour the cream over the chocolate and leave it for 5 minutes before stirring to a smooth ganache.
  3. Add 15g (3/4) of the crushed freeze dried strawberries and stir through.
  4. Place in the fridge for half an hour.
  5. Roll balls of about 2 teaspoons worth of ganache.
  6. Melt the extra chocolate in 30 second increments in the microwave, making sure to stir well between each.
  7. Use two forks to dip and roll the ganache balls in chocolate and set on a baking paper covered plate in the fridge to set.
